The Mastrosso Sandwich
Homegrown Rapini • Burratta • Prosciutto • Fried Chicken • Peppers
Ingredients
- • Big Loaf of Ciabatta Bread
- • Homegrown Rapini (Broccoli Rabe)
- • Garlic
- • Red Chili Flakes
- • Extra Virgin Olive Oil
- • High smoke point oil (avocado, peanut, etc)
- • Chicken Breasts
- • Flour
- • Eggs
- • Milk (or water)
- • Breadcrumbs (traditional or panko)
- • Prosciutto
- • Burrata Cheese
- • Roasted Red Peppers
- • Calabrian Chili Peppers
- • Raw Honey
- • Balsamic Vinegar
- • Salt
- • Black Pepper


Method

Make the honey balsamic glaze by mixing the honey and balsamic vinegar in a small saucepan, whisking frequently until thickened.

Make the Calabrian chili pepper spread by either chopping the canned (or fresh) Calabrian chilis with a knife or crushing with a mortar and pestle. Then mix together with some extra virgin olive oil.

Roughly chop the rapini then mince some garlic.

Saute the rapini and garlic with some red chili flakes, salt, and freshly ground black pepper.

You should butterfly a chicken breast into two halves but I was a barbarian and used two whole chicken breasts.

Pound the chicken breasts (if butterflying, do that first).

Begin heating the high smoking point oil for frying the chicken breasts.

Mix together flour and seasonings of your choosing on a plate.

Mix together eggs and milk in a wide bowl.

Use either seasoned breadcrumbs or make your own seasoned breadcrumbs by mixing breadcrumbs with seasoning. You can even make your own breadcrumbs with dried bread. Amazing!

Dredge the chicken breasts in flour, then egg, then breadcrumbs. I like to push the breadcrumbs into the chicken a little bit and freezing them for 20 minutes can help make the breading adhere to the chicken.

Fry the chicken breasts in hot oil.

Drain the chicken breasts on a wire rack or paper towels.

Cut the Big Loaf of Ciabatta Bread in half lengthwise

Put the Calabrian chili spread on the bottom slice of bread

Add the fried chicken breasts

Add half the package of prosciutto

Crumble two balls of burratta

Add the rapini (broccoli rabe)

Add the other half of the prosciutto

Drizzle the honey balsamic glaze on top of the prosciutto, then press the bread down on top to get it on the bread too

Open the sandwich back up and add the roasted red peppers
