Garden Salad with Dorito Chicken Tenders

Ingredients
- • Head of lettuce
- • Radishes
- • Cucumbers
- • Cherry Tomatoes
- • Quinoa
- • Fresh Mozzarella
- • Cruotons
- • Chicken Tenderloins
- • Flour
- • Egg
- • Chinese Hot Mustard Doritos
- • Greek Dressing (or something homemade!)


Method

Start off by cooking the quinoa according to the package instructions. This should be done at least a couple of hours before so you can chill it.

Slice the radishes and cucumbers. Cut the mozzarella into squares.

Pound the chicken tenderloins with the palm of your hand a bit.

Crush up the doritos by putting them on a plate and smashing them with your fists.

Bread the chicken tenders in flour (seasoned to your liking), beaten eggs, and crushed doritos.

Fry the tendies in hot oil (preferably deep fry but pan frying works too).

Drain the tendies on a wire rack and let them cool slightly while you assemble the salad (watch my video to see how I do it)

The base of the salad is first quinoa, then lettuce, then radishes, cucumbers, cherry tomatoes, crutons, and mozzarella.

Slice the tendies into little strips then put on top of the salad. You can toss the salad beforehand if you want everything more mixed.

Drizzle the salad dressing all over.
