Collard Greens with Bacon and Onions

Ingredients
- • 1 bunch of collard greens
- • 1 large onion or 2 small onions
- • 2 cloves of garlic
- • Several pieces of bacon
- • Chicken broth
- • Freshly Ground Black Pepper
- • Red Pepper Flakes
- • Cayenne Pepper
- • Paprika
- • Hot Sauce
- • Rice Vinegar
- • Fried Chicken (optional)


Method

Go outside and harvest the collard greens.

Cut the rough fibrous stalk out of the collard greens and either feed em to the chickens or throw em in the compost pile.

Cut the collard green leaves into pieces as shown in the video.

Chop up the garlic and the onions.

Now fry up the bacon on medium heat, get it nice n crispy then dry on a paper towel.

Throw in the garlic and red pepper flakes, saute for about 10 to seconds and swirl around in the oil then add the onions

Saute everything together for another minute or so.

Add in the collard greens and saute them in with the garlic and onions for a couple of minutes.

Add in the chicken broth, freshly ground black pepper, cayenne pepper, and paprika.

Remove the broccoli florets and toss onto the same plate that you have the beef set aside on.

Simmer for 30 minutes to 1 hour on a medium low heat.

Towards the end, add in a little hot sauce and rice vinegar (or other type of vinegar).

At the very end crumble the bacon on top. I do not cook the bacon in the broth because it gets soggy. So I cook it first and remove it, using the fats for flavor in the broth but keeping the bacon crispy for when I serve the dish.

I typically eat this dish with fried chicken and cornbread but you can do as you please!
